We will miss our Great Grandpa!
Grandpa Wendell passed away yesterday morning after a courageous battle with cancer- Wendell has been such a great part of all of our lives and the cutest Grandpa to our kids. We will never forget him and the many wonderful memories! Never forgetting our kids B-Days, trips to the Flaming Gorge cabin, trips on the boat, swimming in the pool, playing games, hearing his wonderful, contageous laugh, eating his meat pies and seeing him at the State Fair, watching the way he loved life and always had a smile! We love you Grandpa Wen!
Last night Mikelle went to bed very sad and had been crying most of the night -- We talked about how grateful we are that we had him in our lives and that he is happy and in a good place. It was time for her prayers and I listened to her as she prayed one of the sweetest prayers I have ever heard! She said, "Dear, dear, dear, dear Heavenly Father......please bless Grandpa Wendell because he is a new member up there today, but I know you know that. Please help him feel happy and welcome, and thank you that we could know him and love him." It was so sweet and really taught me a lot as well! How grateful I am for being a wife and mom and getting to hear and witness the sweet times in life that can help make hard times a little easier to bear.

Happiness, Your Heritage
I loved having conference this past weekend! I have felt such a lift and felt so much hope from the words of our general authorities -- at such an uncertain time that we are experiencing lately in our world! I loved President Uchtdorf's comments in the General Relief Society meeting. He talked about how hard we can be on ourselves and told about his wife who cooks masterpiece meals from around the world that are awe-inspiring but it never fails, she always finds something to apologize for. :) And then he contrasted it with how he cooks and said he does great fried eggs and is proud of them. He stated that some sisters undervalue themselves -- and I think we all do at times -- His words gave me comfort and strength in trying to not get too hard on ourselves and realize the things that we do as wives, mothers, grandmas, sisters, friends, daughters, etc. mean so much to each of us and out Heavenly Father! His closing words were wonderful! He said:
"My dear sisters, I have a simple faith. I believe that as you are faithful and diligent in keeping the commandments of God, as you draw closer to Him in faith, hope, and charity, things will work together for your good. I believe that as you immerse yourselves in the work of our Father—as you create beauty and as you are compassionate to others—God will encircle you in the arms of His love. Discouragement, inadequacy, and weariness will give way to a life of meaning, grace, and fulfillment.
As spirit daughters of our Heavenly Father, happiness is your heritage.
BEETS!
Well, we went out the other day and picked our beets -- they didn't grow quite as good as they did in UTAH but good enough. Carter and I went to the farmer's market and got a few more to make it a full batch and canned them! They are literally our family favorite! We can eat a whole bottle on our salads at dinner! Now we just wait 6 weeks for them to fully pickle -- a few have asked for the recipe so here us go! My friend Trish says that beets are like Neil Diamond, either ya love 'em or ya hate 'em! I love 'em both!
8 bunches of beets
4 c. apple cider vinegar
4 c. sugar
1 tsp. salt
First, boil the beets w/ skins on til they are
tender. Dump into cold water in sink and peel the skins off.
Cut into bite size pieces and put into jars.
Make the brine by boiling the vinegar, sugar,
and salt. Ladle into jars to the top and place lids
and rings on tightly. Water bathe for 30 min. and place
on shelves. They need to sit for 6 weeks. Then
refrigerate and eat!!!
